Roasted Sumac Carrots On Garlic Hummus

Roasted Sumac Carrots

INGREDIENTS

  • 6 carrots (peeled)

  • 1 tbsp extra virgin olive oil

  • 1 tbsp ground sumac

  • 1 tsp coriander powder

  • 1 tsp garlic powder

  • 1 tsp sea salt

METHOD

  • preheat oven to 375

  • on a baking sheet, drizzle the carrots with the olive oil

  • add all the other ingredients on the carrots and give it a rub

  • roast for 45 minutes

  • grill on bbq for 3-5 minutes or until charred (otional)

Roasted Garlic Hummus

INGREDIENTS

  • 1 bulb of garlic

  • 1 tsp olive oil

  • 1 can chickpeas

  • 1/3 aquafaba

  • 1/2 to 3/4 tsp salt

  • 1/2 tsp cumin

  • 1/4 cup tahini

  • juice of one lemon

METHOD

  • preheat oven to 400

  • cut the top of the garlic bulb and drizzle with olive oil

  • bake for 30 minutes or until golden

  • once cooled down, peel off the skin and keep the garlic cloves

  • drain your can of chickpeas and keep 1/3 cup of aquafaba

  • add all your ingredients except for the salt to a blender and mix until smooth

  • add salt 1/4 tsp at a time and taste, the amount of salt will vary depending of the brand of chickpeas
