Roasted Sumac Carrots On Garlic Hummus
Roasted Sumac Carrots
INGREDIENTS
6 carrots (peeled)
1 tbsp extra virgin olive oil
1 tbsp ground sumac
1 tsp coriander powder
1 tsp garlic powder
1 tsp sea salt
METHOD
preheat oven to 375
on a baking sheet, drizzle the carrots with the olive oil
add all the other ingredients on the carrots and give it a rub
roast for 45 minutes
grill on bbq for 3-5 minutes or until charred (otional)
Roasted Garlic Hummus
INGREDIENTS
1 bulb of garlic
1 tsp olive oil
1 can chickpeas
1/3 aquafaba
1/2 to 3/4 tsp salt
1/2 tsp cumin
1/4 cup tahini
juice of one lemon
METHOD
preheat oven to 400
cut the top of the garlic bulb and drizzle with olive oil
bake for 30 minutes or until golden
once cooled down, peel off the skin and keep the garlic cloves
drain your can of chickpeas and keep 1/3 cup of aquafaba
add all your ingredients except for the salt to a blender and mix until smooth
add salt 1/4 tsp at a time and taste, the amount of salt will vary depending of the brand of chickpeas
