Roasted Sumac Carrots On Garlic Hummus
Roasted Sumac Carrots
INGREDIENTS
- 6 carrots (peeled) 
- 1 tbsp extra virgin olive oil 
- 1 tbsp ground sumac 
- 1 tsp coriander powder 
- 1 tsp garlic powder 
- 1 tsp sea salt 
METHOD
- preheat oven to 375 
- on a baking sheet, drizzle the carrots with the olive oil 
- add all the other ingredients on the carrots and give it a rub 
- roast for 45 minutes 
- grill on bbq for 3-5 minutes or until charred (otional) 
Roasted Garlic Hummus
INGREDIENTS
- 1 bulb of garlic 
- 1 tsp olive oil 
- 1 can chickpeas 
- 1/3 aquafaba 
- 1/2 to 3/4 tsp salt 
- 1/2 tsp cumin 
- 1/4 cup tahini 
- juice of one lemon 
METHOD
- preheat oven to 400 
- cut the top of the garlic bulb and drizzle with olive oil 
- bake for 30 minutes or until golden 
- once cooled down, peel off the skin and keep the garlic cloves 
- drain your can of chickpeas and keep 1/3 cup of aquafaba 
- add all your ingredients except for the salt to a blender and mix until smooth 
- add salt 1/4 tsp at a time and taste, the amount of salt will vary depending of the brand of chickpeas
