Pancit
INGREDIENTS
3 tbsp vegan butter or 2 tbsp vegetable oil
1 yellow onion, small diced
5 garlic cloves, minced
2 celery sticks, chopped
2 carrots, cut into matchsticks
One green onion for garnish, chopped
8 oz rice vermicelli
2 cups of water mixed with half cube of vegan chicken stock
5 tbsp low sodium soy sauce (preferably liquid aminos)
2 tsp sugar
1/4 salt
Lemon for garnish
METHOD
Sauté onions and garlic in the butter for 2 minutes
Add carrots and celery, sauté for 3 minutes
Add vegan chicken broth, soy sauce, sugar and bring to a boil
Add noodles
Cook on medium heat until all the liquid is absorbed
Salt to taste
Garnish with green onions and lemon wedges
