Pancit

INGREDIENTS

  • 3 tbsp vegan butter or 2 tbsp vegetable oil

  • 1 yellow onion, small diced

  • 5 garlic cloves, minced

  • 2 celery sticks, chopped

  • 2 carrots, cut into matchsticks

  • One green onion for garnish, chopped

  • 8 oz rice vermicelli

  • 2 cups of water mixed with half cube of vegan chicken stock

  • 5 tbsp low sodium soy sauce (preferably liquid aminos)

  • 2 tsp sugar

  • 1/4 salt

  • Lemon for garnish

METHOD

  • Sauté onions and garlic in the butter for 2 minutes

  • Add carrots and celery, sauté for 3 minutes

  • Add vegan chicken broth, soy sauce, sugar and bring to a boil

  • Add noodles

  • Cook on medium heat until all the liquid is absorbed

  • Salt to taste

  • Garnish with green onions and lemon wedges
