Pancit
INGREDIENTS
- 3 tbsp vegan butter or 2 tbsp vegetable oil 
- 1 yellow onion, small diced 
- 5 garlic cloves, minced 
- 2 celery sticks, chopped 
- 2 carrots, cut into matchsticks 
- One green onion for garnish, chopped 
- 8 oz rice vermicelli 
- 2 cups of water mixed with half cube of vegan chicken stock 
- 5 tbsp low sodium soy sauce (preferably liquid aminos) 
- 2 tsp sugar 
- 1/4 salt 
- Lemon for garnish 
METHOD
- Sauté onions and garlic in the butter for 2 minutes 
- Add carrots and celery, sauté for 3 minutes 
- Add vegan chicken broth, soy sauce, sugar and bring to a boil 
- Add noodles 
- Cook on medium heat until all the liquid is absorbed 
- Salt to taste 
- Garnish with green onions and lemon wedges
