Grilled Pineapple Pico
INGREDIENTS
- 1/2 cup pineapple 
- 2 roma tomatoes 
- 1 red onion, chopped finely 
- 1 jalapeño 
- juice of 2 calamansi or 1 lime 
- 1/2 tsp salt 
METHOD
- grill the pineapple until charred, chop finely 
- deseed the jalapeño and chop finely 
- core the tomatoes, chop finely 
- mix all the ingredients in a mixing bowl
