Pita Bread From Scratch
INGREDIENTS
1 3/4 cup warm water
2 tsp sugar
3 tsp active yeast
500g all purpose flour
1.5 tsp salt
METHOD
mix the warm water (it should me slightly above body temperature) with the sugar and the yeast
set aside 10 minutes or until frothy
in a mixing bowl, combine the flour and salt
pour the wet mixture into the dry mixture and mix with your hand
knead for 5 minutes and form a ball with the dough
oil a clean mixing bowl and roll the ball of dough into it
cover the mixing bowl with a rag and set aside to rise for 20 minutes
once the dough has risen, punch it to deflate it
cut into 6 pieces (don’t worry if they are not the same exact size)
form balls with the 6 pieces
transfer on a baking sheet and cover with the rag
set aside and let rise for 15 minutes
sprinkle flour on a cutting board or clean counter
use a rolling pin to flatten each ball into a 1/4 inch thick disc
cook for about 1 minute per side (can be done on a stove top on high heat or on the bbq or fire)
best served immediately, but can be stored in a airtight container
