Carrot Greens & Quinoa Tabbouleh (gluten free)

INGREDIENTS

  • 1 bunch of curly parsley (finely chopped)

  • greens from 7-8 carrots (finely chopped)

  • salt

  • pepper

  • 1 lemon juice

  • 2 roma tomatoes (cored & diced)

  • 1/4 cup quinoa

  • 2 whole green onion (finely chopped)

  • 3 tbsp extra virgin olive oil

  • 2 tsp granulated garlic (optional)

  • 1 tbsp nutrional yeast (optional)

METHOD

  • boil quinoa for 15 minutes, drain & rinse under cold water

  • combine all ingredients

  • eat
