Carrot Greens & Quinoa Tabbouleh (gluten free)
INGREDIENTS
1 bunch of curly parsley (finely chopped)
greens from 7-8 carrots (finely chopped)
salt
pepper
1 lemon juice
2 roma tomatoes (cored & diced)
1/4 cup quinoa
2 whole green onion (finely chopped)
3 tbsp extra virgin olive oil
2 tsp granulated garlic (optional)
1 tbsp nutrional yeast (optional)
METHOD
boil quinoa for 15 minutes, drain & rinse under cold water
combine all ingredients
