Carrot Greens & Quinoa Tabbouleh (gluten free)
INGREDIENTS
- 1 bunch of curly parsley (finely chopped) 
- greens from 7-8 carrots (finely chopped) 
- salt 
- pepper 
- 1 lemon juice 
- 2 roma tomatoes (cored & diced) 
- 1/4 cup quinoa 
- 2 whole green onion (finely chopped) 
- 3 tbsp extra virgin olive oil 
- 2 tsp granulated garlic (optional) 
- 1 tbsp nutrional yeast (optional) 
METHOD
- boil quinoa for 15 minutes, drain & rinse under cold water 
- combine all ingredients 
- eat
