Plant based Tocino

Marinade

INGREDIENTS

  • 2 cups pineapple juice

  • 2 cups brown sugar

  • 8 garlic cloves, minced

  • 2 tbsp salt

  • 1/4 cup soy sauce

  • 1/4 cup rice vinegar

  • few drops of vegan food coloring

METHOD

  • Mix everything in a mixing bowl

Tocino “pork”

INGREDIENTS

Dry:

  • 12 oz wheat gluten

  • 1 tsp salt

  • 1 tsp cumin

Wet:

  • 2 tbsp vegetable oil

  • 1 cube vegan chicken broth

  • 1 tsp soy sauce

  • 1 cup water

  • 1/2 pound medium or firm tofu

METHOD

  • In a mixing bowl, combine the dry ingredients

  • Crumble up the tofu with your hands, medium tofu is ideal, but firm will work too

  • Add the vegan chicken broth (broth cube + water), oil, crumbled tofu and soy sauce on top of the dry mix

  • Mix well

  • Once a ball of dough is formed, transfer to a clean surface and knead for 2-3 minutes

  • Separate into 4 patties

  • In a steaming basket, steam for 30 minutes or until no longer doughy in the center

  • Cool down for about 30 minutes or until you can manipulate the patties without burning yourself

  • Break down the “pork” into bite size pieces and add to a pot with all the marinade

  • Cook in marinade for 20 minutes

  • Right before serving, cook the desired portion in vegan butter or oil until the tocino is caramelized and almost looks burnt

  • Serve with rice!
